Types of Rice
BASMATI RICE
Varieties: 1121 Golden Sella, Traditional Basmati
Grain Length: 6.61 mm minimum for export.
Moisture Content: Maximum 14% 36.
Broken Grains: Typically 2% to 5% depending on grade 35.



NON-BASMATI RICE
Types: Includes varieties like Idli rice and White rice.
Average Grain Length: Ranges from 5.2 mm to over 6 mm depending on the specific type.
Moisture Content: Maximum 14%



BROKEN RICE
• Definition: Broken rice refers to fragments of rice grains obtained during milling. It retains the same chemical composition as white rice, primarily consisting of carbohydrates
• Uses: Commonly used as animal feed, particularly for young animals and pets due to its high caloric value and low fiber content.
• Utilized in the brewing industry and as a raw material for rice flour in various food products like baby food, breakfast cereals, and rice wine.
Types:
• Standard broken rice
• Thick broken rice
• Parboiled broken rice
• Brown broken rice
• Puffed broken rice



PUFFED RICE
Varieties: Common varieties include:
Mahamaya: Known for high volume expansion.
IGKV R2 (Durgeshwari): Offers good puffing characteristics.
Barhasal: Moderate expansion properties.
Grain Length: Typically ranges from 8.86 mm to 9.51 mm depending on the variety 1.
Moisture Content: Optimal moisture for puffing is around 14%, although pre-treatment drying can enhance puffing yield by adjusting moisture levels 3.
Expansion Ratios: Expansion ratios vary significantly among varieties, with Mahamaya achieving a volume expansion ratio (VER) of up to 7.629, while IGKV R2 and Barhasal have lower ratios BROKEN RICE:- Varieties: Includes both Basmati and non-Basmati types, with specific varieties showing higher broken Grain rates:
Egyptian Jasmine: Noted for the highest percentage of broken grains among studied varieties 1.
Sakha 101: Lower broken grain percentage compared to others.
Grain Length: Generally shorter than whole grains; specific lengths may vary but typically fall below 5.2 mm for broken rice.
Moisture Content:
Similar to puffed rice, with a maximum allowable moisture content of around 14% for export quality.
Percentage of Broken Grains:
Varieties like Egyptian Jasmine show a higher percentage of broken grains compared to others such as Sakha 101 and Giza 178
